The easiest mid-week dinners for families
When it comes to dinner, it’s definitely easiest to just put the same rotation of meals on the table each night. But, in the interest of expanding your children’s palate and ensuring they’re getting all of the good stuff they need, it’s definitely worth trying out new things now and then – and it’s not as tough as you might think. Even in the middle of the week!

Sausage and pea pasta sauce
When it comes to easy mid-week dinners, pasta is always one of our go-to’s – it’s quick, simple and you can pretty much toss anything from your veggie drawer into the sauce and feel confident that your kids are getting a nutritious meal. This sausage and pea pasta sauce is particularly tasty and can be whipped up in 20 minutes – win, win!

Broccoli and chicken cheesy lasagne
Lasagne is a favourite among most kids and adults alike, but its many layers and elements mean it isn’t the quickest mid-week dish. Luckily, this recipe allows you to have some of the elements – for example, the cooked chicken slices – pre-prepared and ready to go, and also packs veggies like broccoli into a dish that wouldn’t normally include greens. With just 15 minutes required to prepare this lasagne, it’s an awesome meal for when you need to spend your afternoon doing everything except cooking dinner.

Moroccan lamb in the slow cooker or pressure cooker
Slow cookers are the key to making hearty, flavourful meals with minimal time spent in the kitchen, so finding a recipe that utilises them is a major win. But when we find a recipe that can also be thrown into a pressure cooker, it’s like all of our Christmases have come at once. Spiced lamb, fetta and spinach gozleme (the cheat’s version)
After an easy mid-week meal that you haven’t already made 800 times before? This adaptation of the Turkish flat-bread dish is as fun to make as it is to eat, and you can stuff them with just about anything! In just 10 minutes of prep time and 10 minutes of cooking time, you can have six steamy, spiced gozleme served up.

Carrot and parsnip soup
Soup may have a reputation as a ‘winter warmer’, but it’s great as a mid-week dinner all year round. This recipe in particular is loaded with nutrients, but you can always change up the veggies depending on what your kids prefer (or what you’ve got left in the fridge!). Serve it up with some crunchy bread and you’re good to go.
