Easy banana pancakes recipe for kids

These banana oats pancakes are healthy, delicious and super-simple to make – winning right there! Whip up a batch to fill your little one’s tummy and give them a great start to the day.
Kids love banana pancakes. They’re easy for children to eat with their fingers and soft enough for them to practice slicing with a knife and fork. Either way, they’re developing their fine motor skills – yay! Try this recipe out when you have a little time on the weekend and your kids can help measure, pour and mix the ingredients, listen to the butter sizzle and then decorate the pancakes with banana, berries or their favourite toppings. Having children involved in preparing food is a great way to get them interested in tasting it too. And, once they’re hooked, this banana pancake recipe is so quick to whip up, it’s sure to become a staple any day of the week.
Are banana pancakes healthy?
It’s no secret bananas are good for us. They’re loaded with Vitamin B6, Potassium, Magnesium and Vitamin C and they’re high in fibre which helps with digestion and keeps us feeling full longer. Bananas are considered a low GI carbohydrate, providing slow-release energy, which is terrific for powering active bodies. Mixing the bananas with milk and egg gives children a boost of protein for growing muscles and dairy for strong bones, making these banana pancakes a healthy food option.
Oat and banana pancake ingredients
½ cup of oats
¼ cup of milk
1 egg
1 ripe banana
1/2 tsp vanilla extract
1/2 tsp baking powder
Cinnamon to taste
Method
Put all ingredients into a blender or food processor.
Blend until smooth and combined. (If you don’t have a blender or food processor, mash the banana with a fork and stir all the ingredients together with a spoon.)
Heat a small amount of butter in a fry pan on medium to high heat.
Pour mixture to form desired pancake size into heated frying pan.
Flip pancake over when “bubbles” appear on top of pancake or when underside is golden.
Cook for about 1 minute or remove when golden.
Repeat with remaining mixture.
Top banana pancakes with berries and Greek yoghurt for a healthy breakfast or snack.
